Smoked Fish & Pesto Pasta

This is a total "I'm tired after work and want something good" pasta dish. Once you have the pesto made and the smoked fish on hand, this meal comes together in a heartbeat. You can vary it endlessly depending on what kind of smoked fish and what variety of pesto you use. This recipe serves 2, but it can be doubled easily.

Prep Time: 5 minutes

Cook Time: 20 minutes

Ingredients:

  • 1/2 pound pasta, spaghetti is fine
  • 1/3 pound smoked fish, flaked into small pieces
  • 4 T. pesto
  • 1 t. extra-virgin olive oil
  • Juice of 1 lemon

Preparation:

Bring a large pot of heavily salted water to a boil. How much salt? It should taste like the sea.

In a large bowl, mix the flaked fish and the pesto.

Cook the pasta until it is al dente, or still a bit firm to the tooth. Drain and pour over the pesto-fish mix in the bowl.

Add the lemon juice and olive oil and mix well. Serve at once.
