Smoky Salmon and Green Chile Party Dip

Smoky Salmon & Green Chile Party Dip

This creamy dip delivers the rich flavors of hot-smoked salmon -- without the expense. It uses flavorful (and economical) canned salmon with a small amount of high quality liquid smoke seasoning to create a tasty and very addictive party dip that can also be used as a spread. Roasted green chiles bring another layer of tangy, smoky goodness to the party.

Serve with crackers or mini toasts, or with pre-cut fresh vegetables. This recipe doubles well and can be made up to 2 days ahead of time.

Total Time: 10 minutes

Yield: About 2 cups

Ingredients:

  • 1/2 cup cottage cheese
  • 8oz package cream cheese, softened
  • 5 oz can boneless, skinless salmon, well drained
  • 4 oz can chopped green chiles
  • 1/2 tsp Old Bay or other seafood seasoning
  • 1/4 tsp garlic powder
  • 1/4 tsp liquid mesquite smoke flavoring (see Cook's Note)
  • Freshly ground black pepper

Preparation:

In a food processor or blender, process the cottage cheese until smooth. Add the cream cheese and whip until thoroughly combined and creamy.

Transfer the cheese mix to a bowl. Fold in the salmon, green chiles, Old Bay, garlic powder, smoke seasoning, and about 1/4 teaspoon of black pepper.

Taste the dip; add more smoke 1-2 drops at a time until the desired flavor is reached (it's very easy to overdo it, so be cautious.) Add more black pepper, if desired.

Chill at least 30 minutes. Garnish with finely chopped chives or dill (fresh or dried) before serving.

Cook's Note: Liquid smoke flavoring can be found in the condiments aisle of the supermarket. It is very, very important to look at the ingredients, as some can contain artificial flavorings, sugars, or even vinegar! The most famous brands are often the worst offenders. Look for a liquid smoke that has an absolute minimum of ingredients -- usually just water, natural smoke flavoring, and a preservative (a small amount of coloring is acceptable, if necessary.) Two excellent brands are Wright's and Haddon House
