These kebabs use a low fat Caesar salad dressing as a marinade, with an added flavor kick from freshly ground black pepper, basil, and a pinch of cayenne.
As with any tuna dish, keep a close watch while they're cooking. Just a couple of minutes on each side is all that's needed to produce rich and juicy results.

Ingredients:
- 2 lbs tuna steaks or medallions, cut into 1 1/2 inch chunks
- 1/3 cup low fat bottled Caesar salad dressing
- 8 skewers
- 2 tsps dried basil
- 1/4 tsp cayenne pepper
- Freshly ground black pepper
- Coarse salt
Preparation:
Thread the tuna pieces onto 8 skewers. Sprinkle both sides with the basil, cayenne, and generous grindings of black pepper.
Grill over hot coals or under a broiler on High heat for 2 minutes per side. Sprinkle with coarse salt.
Grilled plum tomatoes and a salad dressed with a little olive oil and lemon juice are a nice accompaniment.
