This tasty tilapia dish pairs sweet chili sauce with its best friend in Asian cuisine, roasted peanuts, and adds zesty minced shallots to the crunchy, salty, spicy topping. Serve this with stir-fried noodles and veggies for an easy weekday meal that everyone will enjoy.
Makes 4 servings of Peanut-Crusted Sweet Chili Sauce Tilapia

Ingredients:
- 1/2 cup Asian sweet chili sauce (such as mae ploy)
- 1 tablespoon finely chopped shallots
- 4 6oz skinless tilapia fillets
- Salt and pepper
- 2 teaspoons ground ginger
- 3/4 cup chopped roasted and salted peanuts
Preparation:
Preheat the broiler. In a bowl, mix together the sweet chili sauce and the shallots. Set aside. Pat the fillets dry with paper towels and sprinkle lightly with a little salt and pepper. Dust them evenly with the ginger.
Place the fillets on a lightly oiled broiling pan and spread the chili sauce evenly over the top of each fillet. Sprinkle with the chopped peanuts, pressing down slightly to help them adhere.
Broil on low heat (or in the lowest part of the broiler) for 4-5 minutes, or until the thickest part of the fish flakes with a fork. Watch the fish carefully to make sure the peanuts don’t get too dark. (If they brown before the fish flakes, place a sheet of aluminum foil loosely over the top.)
