Cajun Crawfish Croissant Sandwich

Take crunchy cornbread fritters bursting with sweet crawfish tail meat, nestle them in a buttery toasted croissant, add zesty cajun cole slaw, and what do you have? A Craw-ssant, that's what! And is it good? Oh cherie, don't let me commence!

This version is only medium-spicy, but you can bring up the zing level if you wish by adding additional cayenne to the fritters and another dash or two of hot pepper sauce to the slaw or even some finely shredded chiles.

Yield: 4 Servings

Ingredients:

  • For the Slaw:
  • 2 cups finely shredded cabbage
  • 2 medium scallions, finely chopped
  • 1 Tbsp finely chopped parsley
  • 1/2 tsp garlic powder
  • 1/2 tsp dry mustard
  • 1/4 tsp black pepper
  • 1/4 cup mayonnaise
  • 1 Tbsp hot pepper sauce
  • 1/2 tsp Worcestershire sauce
  • For the Fritters:
  • 2 Tbsp olive oil
  • 1 Tbsp finely chopped garlic
  • 3/4 cup chopped onion
  • 1/2 cup chopped green pepper
  • 1/4 cup chopped celery
  • 6 oz crawfish tail meat
  • 1/4 cup cornmeal mix (see Cook's Note)
  • 1 large egg, beaten
  • 1/2 tsp dried thyme
  • 1/4 tsp cayenne pepper
  • 1/4 tsp salt
  • 1/4 tsp seasoned salt or onion salt
  • 1/4 tsp black pepper
  • Oil for frying
  • 4 large buttery croissants (see Cook's Note)

Preparation:

In a large bowl, combine the slaw ingredients. Mix well and refrigerate.

Cook the garlic, onion, green pepper, and celery in the olive oil until softened (about 10 minutes); remove from pan and let cool.

In a large bowl, combine the vegetable mix with the crawfish tails, cornmeal mix, egg, and seasonings.

In a Dutch oven or deep skillet, heat 1/2 inch of oil to 360 degrees. Fry fritter mixture by the tablespoon until golden brown and cooked through (fry fritters in batches to avoid dropping the oil temperature too much.) Drain fritters on a rack or on plain paper towels. Keep warm.

Split the croissants along the outside curve and toast lightly, if desired. Divide the fritters and the slaw between the croissants and serve immediately.

Cook's Notes:
  • Cornmeal mix is available in the baking aisle of most supermarkets. It's a combination of finely ground cornmeal and white flour, along with some baking soda, salt, etc. Cornbread mix is similar, but usually has sugar. You can substitute it here, but try to find cornmeal mix if you can, as it's more versatile.

  • For snack size sandwiches, use 8 mini croissants and cut the fritters in half to fit.
