Asian Steamed Shrimp and Pork Purses

Using the master recipe for Asian Shrimp and Pork Filling, you can easily make these delightful (and very impressive) steamed dim sum appetizers. They're great for parties, holiday get-togethers, or as an extra fancy first course in a Chinese meal.

You can use any round dumpling wrapper, but I prefer the thin, golden 'Hong Kong-style' that are often available in the frozen foods section of Asian markets.

Prep Time: 20 minutes

Cook Time: 20 minutes

Total Time: 40 minutes

Yield: 36 appetizers

Ingredients:

  • 1 recipe Asian Shrimp & Pork Filling
  • 36 round Asian dumpling wrappers
  • 36 medium or large size cooked, peeled shrimp (tails attached, if desired)
  • Thinly sliced green onion tops for garnish

Preparation:

Spread the center of a dumpling wrapper with about 1 1/2 teaspoons of the filling and place a shrimp upright in the center.

Moisten the edges of the wrapper with a little water. Draw the edges up toward the top and pinch them together to form a shape like an old drawstring pouch. Don't worry at all about getting the pleats right. As long as it holds together, it's fine. Repeat with remaining ingredients.

Place the shrimp purses in a single layer, not touching, in an oiled bamboo or metal steamer. Bring water to a boil and steam the dumplings for 3-5 minutes (cook in batches, if necessary.)

Serve with ponzu or soy sauce, sprinkled with green onions, if desired.
