Doug DuCap is the author (with Linda Beaulieu) of the Knack Fish and Seafood Cookbook: Delicious Recipes for All Seasons (2010, Globe Pequot Press) and was the Grand Prize winner of the 2007 Taste of the South recipe competition (judged by James Beard Award winners Matt and Ted Lee.)

His recipes have appeared in numerous publications, including New York Times food columnist Molly O'Neill's highly acclaimed One Big Table: A Portrait of American Cooking (2010, Simon & Schuster)

Experience:

Doug is the co-founder and editor of the popular coastal food blog, Hugging The Coast (www.huggingthecoast.com), for which he has created dozens of original recipes.

He has worked alongside commercial fishermen, crabbers, shrimpers, and oystermen on boats large and small to learn "hands-on" how fish and seafood gets from the water to your table. This in-depth experience gives him a broad perspective not only on the species themselves, but also on important related issues like sustainability and responsible stewardship of natural resources.

In addition, his years spent in the kitchen developing hundreds of new recipes in a wide variety of styles gives him a deep knowledge of food and flavors.

Seafood cooking has a reputation for being 'tricky' or 'advanced', but it really doesn't have to be intimidating. With some basic knowledge and an adventurous spirit, anyone can learn to make wonderful meals with the bounty of our oceans, lakes, and rivers.

Good quality fresh and frozen seafood is available nearly everywhere these days, and that offers exciting opportunities in the kitchen. And since less is often more when it comes to seafood, recipes don't have to be elaborate to produce delicious results. Each ingredient in a dish has its own voice; the goal of good cooking is simply to help them sing together in harmony.

I believe that cooking for family and friends is a way to express our affection for them everyday -- not just on special occasions -- because each day is a gift, and every meal can be a celebration.
