Have you ever come home wanting something really good for dinner, something that would make you relax, forget about your day, and let out a long, satisfied sigh at the end?
Well, the only problem is that someone's got to cook it -- and if no one is jumping up to volunteer, then what? A disappointingly mediocre pizza delivered by one of the national cartels? You know you deserve better than that!
So how about this instead: a meal that satisfies all the requirements of good comfort food but only takes about 15 minutes to prepare -- in one dish -- in the microwave.
Like a lot of people, I tend to think of the microwave as a useful item for warming up leftovers, defrosting frozen foods, etc., but not really as a cooking device. When I step into a kitchen, I reach for pots and pans, not microwave-safe bowls. But this meal was so satisfying that I guess I'll have to show my microwave a little more respect in the future.
