A Thanksgiving Fish Dish

Yes, I know Thanksgiving is supposed to be Turkey's Big Day, but it has not always been that way: Many years ago, harvest celebrations -- Thanksgiving only started as an official holiday in the Civil War -- in coastal New England featured a whole, stuffed cod as the main dish.


Instead of a roasted bird you have a wonderfully flaky roasted fish, moistened with sweet butter and filled with a bread-and-oyster stuffing.


Give this dish a go next time you get a chance to buy a whole Pacific cod, or an Atlantic cod that has been caught by hook and line. If your family is small, substitute a striped bass or a haddock.
